The Curation: A Collaboration with Olivia Evans
A great wine list isn't just a list of labels; it’s a conversation. This award is the result of a deep collaboration with our sommelier, Olivia Evans.
Olivia’s vision was to create a list that didn't just "match" our bold Southeast Asian flavors but actively elevated them. Together, we looked for wines that could stand up to the heat of a green sambal, the richness of our beef cheek rendang, and the delicate salt-sweet balance of our soy sauce ice cream.
Hunting for the Rare: Beyond the Retail Shelf
You won't find our selections at your local bottle shop. We’ve made it our mission to source wines through niche, local distributors and direct relationships with independent winemakers.
By sourcing from these "hidden" pockets of the Australian and international wine world, we ensure that every bottle we pour offers something a little bit rare, a little bit unexpected, and entirely memorable.
The Power of 50: Diversity in Curation
There is a common misconception that a "great" wine list needs to be a thick book. We’ve proven the opposite. Despite having fewer than 50 selections at any given time, our list is widely recognized for its incredible diversity.
We’ve traded volume for precision. From crisp, high-acid whites and skin-contact "orange" wines to rare sakes and elegant chilled reds, every single one of our 50 slots is earned. If it’s on the list, it’s there because it has a specific purpose and a unique story to tell.
